Sommelier

We serve grand-cru, grand-chateau, the wine that chef patron buys directly from Domaine of Bourgogne in France and so on. The quality of guests is very high (there are many guests who own wine stocks themselves.) So, many guests have rich knowledge about wine, and wine conversations warm up. It is the best place for staff to learn about wine and hope self improvement.

 

Applicant qualification graduated high school
Necessary experiences experiences of works about wine (inexperience person needs to consult about that.)
Ordinary English conversation
Necessary qualification wine advisor, wine sommelier, senior sommelier (at least one of these)

 

Serveuse

It is the basic service of restaurant service. There are often situations where English is needed (e.g. to explain the dishes), because there are many guests from overseas. We need staff who can hope to get pride as a professional for the service with traditional and classical French dishes. Thanks to excellent guests, it is the best work space for staff who likes service.

Cuisinier

Our chef cuisinier will let you learn the basis (adapted to each experiences). Chef patron Teruo Inoue received the prize "Chevalier de l'Ordre du Merite Agricole". He is also member of French cooking academy “Escoffier Toques Blanches”. He learned traditional and classical French cuisine under Raymond Olivier, who was the owner chef of Le Grand Vefour (three stars French restaurant).

Patissier

This is a French restaurant, so the main work is making the delicate desserts and mignardises for the cafe after meal. It is the best work space for staff who hopes to learn as a Patissier in a setting different from a cake store.
